Cilantro Lime Quinoa Salad

Tools Used: Round Mold, Heat Resistant Spatula, Santoku Chef Knife, Mini Whisk

Ingredients

  • 1 cup Quinoa

  • 2 cups water

  • 1/4 cup olive oil

  • Juice for 1 1/2 limes

  • 2 teaspoons FRENCH PANTRY Zesty Mediterranean Herb Blend

  • 1 1/2 cups halved cherry tomatoes

  • 1 (15 ounce) can black beans, drained and rinsed5 green onions, finely chopped

  • 1/4 cup chopped fresh cilantro

  • 1 avocado, chopped

  • FRENCH PANTRY Sel Gris Salt, to taste

  • FRENCH PANTRY Pep Rally Pepper Mill (your choice), to taste

    Directions

  • Place the Medium or Large Round Mold on a Microwave Safe Plate. Put the Quinoa and water in the Round mold. Place in the microwave and cook on high for 12-14 minutes until all the water is absorbed. Set aside to cool.

  • Whisk olive oil, lime juice, Zesty Mediterranean Herb Blend, and 1 teaspoon salt together in a bowl.

  • Combine quinoa, tomatoes, black beans, and green onions together in a bowl. Pour dressing over the quinoa mixture and toss to coat. Stir in cilantro and avocado; season with salt and pepper.

  • Serve immediately or chill in the refrigerator.



    * This recipe is one of my go to's in the Spring and Summer. It's handy to take somewhere as a side or salad. Everyone loves it and wants the recipe. Add grilled chicken or shrimp for a complete meal.
