Roasted Veggie Pasta Primavera

Tools used: Perforated Baking Sheet, Mold of Choice, Stainless Mixing Bowl, Santoku Chef Knife, Mini Herb Chopper, Petite Grater, Large Round Mold, Heat Resistant Spatula, FRENCH PANTRY Herbs de Provence, FRENCH PANTRY Sel Gris Salt, FRENCH PANTRY Pepper of Choice

Ingredients

  • 1 lb. pasta (bowtie/Farfalle)

  • 3 large carrots, sliced

  • 2 zucchinis, quartered

  • 2 yellow squashes, quartered

  • 2 bell peppers, red and yellow sliced into thin strips

  • 1 lb. fresh asparagus, trimmed and cut into pieces

  • 1 yellow onion

  • 1 cup cherry tomatoes, halved

  • 1 cup Parmesan Cheese

  • 3 Tbsp FRENCH PANTRY EVOO

  • 1 Tbsp FRENCH PANTRY Herbs de Provence

  • 1 tsp FRENCH PANTRY Sel Gris Salt

  • 1 tsp FRENCH PANTRY Pepper

For the Garlic Herb Butter

  • 8 Tbsp softened butter

  • 1 Tbsp lemon zest (zest from 1 lemon)

  • 2 Tbsp fresh parsley, minced

  • salt & pepper to taste

Directions

  • Preheat the oven to 450 degrees. Place the Flexiflat, Large Bonmat, or the Rectangular Flexipat, or the Grande Large Round Mold on the Perforated Baking Sheet. Place veggies in the chosen mold and bake for 20-25 minutes.

  • While those roast in the oven, place the Large Round Mold on a microwave safe plate. Place the pasta in the mold, and add water until the pasta is barely covered. Cook uncovered for 8-10 minutes until pasta is desired doneness. If there is any water left, fold mold in half a drain.

  • Next make the garlic herb butter. pour the softened butter, lemon zest, basil, parsley, garlic, salt and pepper into the Stainless Mixing Bowl. Using a hand mixer, mix until incorporated. Set aside.

  • In a large bowl, mix the pasta with the roasted vegetables. Then add in the cherry tomatoes, Parmesan cheese and garlic herb butter. Toss until the pasta is coated evenly.

    * This recipe makes a lot (a great way to feed a crowd) and can easily be halved. Feel free to use your favorite veggies. I like to use red onion instead of the yellow onion. If you have a garden, this is perfect to use all of your produce. The garlic herb butter makes this dish so flavorful. This is a one-and-done meal and you are getting in all of those beautiful and healthy veggies.
