Cucumber Bites

Tools Used: Heat Resistant Spatula, Mini Offset Spatula, Santoku Chef Knife

Ingredients

  • 1 (8oz) package cream cheese, softened

  • 1 Tbsp bell pepper, finely chopped

  • 1 Tbsp onion, finely chopped

  • 1 Tbsp chives, finely chopped (if not fresh, can substitute FRENCH PANTRY Garlic & Chive Herb Blend)

  • 1 tsp dill weed

  • 2 cucumbers

    Directions

  • In the Stainless Mixing Bowl, combine cream cheese, pepper, chives, dill weed and onions.Mix well and set aside.

  • Cut the cucumbers lengthwise, remove the seeds. Using the Offset Spatula, fill each cucumber half with the mixture. Then cut again in 1" chunks.

    * I had a host that wanted a Keto Cooking Class and I made these for an appetizer. They were a big hit and delicious. It is a great low carb snack or game day choice. Plus they are super easy!
