Warm Winter Soup
Tools Used: Santoku Chef Knife, Eco Chop, Heat Resistant Spatula, Stainless Steel Ladle
Ingredients
1 Tablespoon Olive Oil
12 ounces Kielbasa Sausage, sliced
1 cup yellow onion, diced
2 cloves garlic, minced
2 lbs red potatoes, cubed
2 cups kale, chopped
14.5 ounce can of Coconut Milk, Full Fat
3 cups chicken broth
1 1/2 teaspoons salt
1/4 teaspoon crushed red pepper flakes
Directions (Stove Top)
Heat oil in a soup pot over medium heat. Add in the sausage and onion and cook for 3 minutes. Add in thee rest of the ingredients, bring to a boil and reduce to a simmer. Cook until potatoes are tender (about 15 minutes).
Stir in the coconut milk. Taste soup and add salt and pepper to taste, then serve and enjoy!
Instructions/Instant Pot
Turn Instant pot to saute mode and add in the oil. Add in the sliced sausage and onion and saute for 3 minutes and then hit the cancel button.
Put the garlic, potatoes, kale, salt, pepper flakes and broth into the Instant Pot, seal the lid and close the steam valve.
Turn to pressure mode on high pressure and set time to 10 minutes.
When the timer goes off, do a quick release of the steam. Stir in the coconut milk. Add a little more salt and pepper to taste.
* I have made this recipe in the Instant Pot and on the Stove Top. I like this recipe because it has only a few ingredients, is healthy, doesn't take long, and is delicious. It's the perfect soup for winter to warm you up.
