Warm Winter Soup

Tools Used: Santoku Chef Knife, Eco Chop, Heat Resistant Spatula, Stainless Steel Ladle

Ingredients

  • 1 Tablespoon Olive Oil

  • 12 ounces Kielbasa Sausage, sliced

  • 1 cup yellow onion, diced

  • 2 cloves garlic, minced

  • 2 lbs red potatoes, cubed

  • 2 cups kale, chopped

  • 14.5 ounce can of Coconut Milk, Full Fat

  • 3 cups chicken broth

  • 1 1/2 teaspoons salt

  • 1/4 teaspoon crushed red pepper flakes

    Directions (Stove Top)

  • Heat oil in a soup pot over medium heat. Add in the sausage and onion and cook for 3 minutes. Add in thee rest of the ingredients, bring to a boil and reduce to a simmer. Cook until potatoes are tender (about 15 minutes).

  • Stir in the coconut milk. Taste soup and add salt and pepper to taste, then serve and enjoy!

  • Instructions/Instant Pot

  • Turn Instant pot to saute mode and add in the oil. Add in the sliced sausage and onion and saute for 3 minutes and then hit the cancel button.

  • Put the garlic, potatoes, kale, salt, pepper flakes and broth into the Instant Pot, seal the lid and close the steam valve.

  • Turn to pressure mode on high pressure and set time to 10 minutes.

  • When the timer goes off, do a quick release of the steam. Stir in the coconut milk. Add a little more salt and pepper to taste.

* I have made this recipe in the Instant Pot and on the Stove Top. I like this recipe because it has only a few ingredients, is healthy, doesn't take long, and is delicious. It's the perfect soup for winter to warm you up.
