Taco Mac
bonCook tools used: Large Round Mold, Octagonal Bonmat, Heat Resistant Spatula
Ingredients
1 pound ground turkey or beef
1 (10 ounce can) Ro-Tel, undrained
1 cup broth (chicken or beef broth)
1 cup milk
1 (8 ounce) can tomato sauce
1 package taco seasoning
1 1/2 cups elbow noodles (may use gluten-free elbows)
1 1/2 cups shredded cheddar cheese
Directions
Place Large Round Mold on a microwave safe plate. Place the ground meat in the mold and break up with the Heat Resistant Spatula. Cover with the Octagonal bonmat. Cook in the microwave for 3-4 minutes, remove from the microwave and carefully lift the Octagonal Bonmat. Break up the ground meat again, and cook for an additional 2 minutes, or until cooked through. Let cool for a few minutes. Remove Octagonal Bonmat, fold mold in half and drain any liquid.
Add the undrained can of Ro-Tel, broth, milk, tomato sauce, taco seasoning, and noodles. Stir to combine. Place the mold uncovered in the microwave and cook at 5 minute intervals (stirring after each interval) for 15 minutes or until noodles are tender. Stir in the shredded cheddar cheese.
* Who needs a one pan meal? This recipe does the trick. Think homemade Hamburger Helper but even better! Plus you are not having to watch over a skillet on the stovetop. This fits the bill for a 30 minute meal from start to finish, and even qualified for Taco Tuesday!
