Microwave Lemon Curd

Tools Used: Large or Medium Round Mold, Mini Whisk, Heat Resistant Spatula, Le Petit Grater, Citrus Press

Ingredients

  • 1 cup sugar

  • 3 large eggs

  • 1/2 cup unsalted butter, melted

  • Zest of 3 lemons

  • 1 cup fresh squeezed lemon juice

    Directions

  • Place Medium or Large Round Mold on a microwave safe plate.

  • Add the sugar and eggs. Stir with the Mini Whisk until evenly incorporated. Add lemon juice, melted butter, zest and lemon juice. Stir.

  • Microwave oh high for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Approximately 5-6 minutes.

  • Let cool. It will thicken up as it cools.

    * This is the easiest way to make Lemon Curd! No more standing over a pan and stirring constantly. Use the lemon curd for tartlets, desserts,top cheesecake and more. It can be stored for up to 3 weeks in the refrigerator.
