Microwave Lemon Curd
Tools Used: Large or Medium Round Mold, Mini Whisk, Heat Resistant Spatula, Le Petit Grater, Citrus Press
Ingredients
1 cup sugar
3 large eggs
1/2 cup unsalted butter, melted
Zest of 3 lemons
1 cup fresh squeezed lemon juice
Directions
Place Medium or Large Round Mold on a microwave safe plate.
Add the sugar and eggs. Stir with the Mini Whisk until evenly incorporated. Add lemon juice, melted butter, zest and lemon juice. Stir.
Microwave oh high for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Approximately 5-6 minutes.
Let cool. It will thicken up as it cools.
* This is the easiest way to make Lemon Curd! No more standing over a pan and stirring constantly. Use the lemon curd for tartlets, desserts,top cheesecake and more. It can be stored for up to 3 weeks in the refrigerator.
