Brownie Fruit Pizza

bonCook tools used: Perforated Baking Sheet, Flexiflat, Stainless Mixing Bowl, Offset Spatula, Heat Resistant Spatula, Cake Server Knife

Ingredients

  • 3/4 cup unsalted butter, melted and cooled slightly

  • 3/4 cup cocoa powder

  • 1 1/2 cups granulated sugar

  • 1/2 tsp salt

  • 3 large eggs

  • 1 Tbsp vanilla extract

  • 3/4 cup all-purpose flour

  • Fresh fruit, diced small for topping

Cream Cheese Frosting

  • 6 Tbsp cream cheese, softened

  • 6 Tbsp unsalted butter, softened

  • 1 cup powdered sugar

  • 1/2 tsp vanilla extract

Directions

  1. Preheat the oven to 350 degrees. Place the Flexiflat on a Perforated Baking Sheet. Set aside.

  2. In the Stainless Mixing Bowl, stir together the melted butter and cocoa powder until well blended. Mix in the sugar and salt. Blend the eggs one at a time. Sitr in vanilla extract then add flour and stir until no streaks of flour remain.

  3. Pour into the Flexiflat. Bake in the oven for 18-20 minutes, until a toothpick inserted into the center comes out with a few moist crumbs attached. Set Perforated Baking Sheet and Flexiflat on a wire rack and cool completely.

For the Cream Cheese Frosting

  1. In the bowl of a stand mixer, whip cream cheese and butter until smooth and fluffy. Mix in vanilla then add powdered sugar and continue to whip the mixture until smooth and fluffy.

  2. Spread the cream cheese frosting over the cooled brownies with the Offset Spatula. Arrange sliced fruit on top of cream cheese frosting.

* You can make bothe the brownies and frosting ahead of time. You can even frost them the day before and refrigerate them, just add the fruit before serving. This makes a beautiful Springtime dessert that is simple. You do not need to purchase a box of brownie mix when they are so easy to mix up with ingredients you already have in your pantry. With strawberry season around the corner, I like to cover the whole pizza with them.
