Smashed Potatoes

Perforated Baking Sheet, Bonmat, Round Mold (medium or large), Octagonal Bonmat, Masher, Kitchen Scissors
Ingredients:
Yukon Gold Potatoes (small to medium size)
Olive Oil
Kosher salt
Fresh Ground Pepper
Sour Cream
Fresh Chives
Directions:
Preheat oven to 400 degrees. Place Bonmat on Perforated Baking Sheet.
Wash potatoes, and prick with a fork. Place Medium or Large Round Mold on a microwave safe plate.
Place potatoes in Round Mold, add 1/8 cup water, cover with Octagonal Bonmat. Microwave for 8-10 minutes, or until potatoes are tender.
Place potatoes on Bonmat, using a fork or potato masher, mash each potato. Drizzle potatoes with olive oil, and season with salt and pepper.
Bake 15-20 minutes or until crispy and browned.
While potatoes are baking, snip the fresh chives with the Kitchen Scissors.
Serve with sour cream and chives.
