Cucumbers & Onions

I grew up with my mother making cucumbers and onions every summer. Making these brings back such good memories. We would have these at summer gatherings, cookouts, and they were always in the refrigerator all summer. We have 2 cucumber plants this year and they are producing well. It is fun to see things that you plant and see the growth. As a girl I would put the cucumbers on top of my green beans and eat them. I loved vinegar and still do. There is nothing like an Indiana summer meal with fresh green beans from the garden, cucumbers and onions, and corn on the cob.

Ingredients

  • Cucumbers (as many as you like or can fit into a bowl)

  • Large yellow onion (or 2 if making a big batch)

  • 1 cup water

  • 1 cup apple cider vinegar

  • 1 1/2-1 3/4 cups sugar

  • Salt & pepper to taste


Directions

Peel the cucumbers and slice into thin to medium slices. 

Slice the onion into thin slices. I usually quarter the onion to make it easier to slice and it makes smaller pieces. 

Combine the water, vinegar, and sugar in a large glass bowl. Microwave for 1 minute so the sugar dissolves. Use the mini whisk to make sure the sugar is not visible. 

Add in the sliced cucumbers and onions and stir.

Season with salt and pepper. 

Store in the refrigerator for up to 2 weeks.
