Blueberry Galette (Rustic Tart)

What is a Galette? It is simply a French term for a flat round or rustic tart with folded edges. They are so easy to make! You can certainly make your own pie crust, but take the shortcut and use refrigerated boxed crust that is already to go. You can adapt this recipe to any of your favorite summer fruits. This is perfect when you need a quick dessert, and a beautiful presentation. This is excellent with vanilla ice cream!

Ingredients

  • 1 pound blueberries

  • 1/4 cup sugar

  • 2 tablespoons cornstarch

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1 pie crust, store bought or a store bought prepared refrigerated box crust

  • 1 egg (for egg wash)

  • 1 tablespoon turbinado sugar

  • Whipped cream (optional)


Directions

Preheat the oven to 400 degrees F. Place a Bonmat on a Perforated Baking Sheet. 

In a medium size bowl combine the blueberries, sugar, cornstarch, zest and juice of one lemon. Set aside. 

Place the Roul'Pat on your work surface. Roll out the pie crust until even. 

Place the crust on the Bonmat. 

Spoon the blueberry mixture into the center of the pie crust round, then fold the dough up over the filling. 

Brush the galette with beaten egg then sprinkle with turbinado sugar or regular granulated sugar. 

Bake for 20-25 minutes or until golden brown. 

Serve with whipped cream or ice cream.
