Banana Oat Pancakes

These banana pancakes are flourless, healthy, and tasty.  They are also super simple since you put everything in the blender.  Make sure you have ripe bananas with a few spots.  I used vanilla for flavoring. This recipe made 8 medium sized pancakes.  The recipe can be easily doubled.

Ingredients

  • 2 ripe bananas

  • 1 cup oats (quick or rolled)

  • 2 eggs

  • 2 heaping tablespoons Greek yogurt

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla or cinnamon (optional)

  • Butter or coconut oil


Directions

Use a blender to blend all the ingredients (not butter or coconut oil) together until smooth.  

Heat a large non-stick pan to medium heat.  Add the butter or coconut oil to cover the pan.  Pour the batter forming medium sized pancakes.  Once bubbles come up and the edges are done, flip and continue until golden brown and then transfer to a plate.  

Serve immediately and top with your favorite toppings, maple syrup, fresh fruit, or peanut butter.
