Sloppy Joe Bowls

Trying to mix things up for dinner.  Bowls are a fun addition and can be tailored to your tastes.  Make one up with the items you have leftover in your fridge. I like sloppy joes and sweet potatoes so this looked good to try. 

You can add regular ketchup instead of sugar free. I found a sugar free brand of ketchup that I like. It's called G Hughes.  It's found in the condiment aisle with the ketchups.  If you are watching your sugar intake, it is a good swap. This is also a Gluten-Free recipe.

Ingredients

  • 1 large sweet potato, cut into 1/4 inch slices

  • 1 tablespoon Olive Oil

  • 1 teaspoon salt

    Sloppy Joe Mix

  • 2 tablespoons Olive OIl

  • 1-2 tablespoon garlic, minced

  • 1/4 cup yellow onion, diced

  • 1/4 cup red onion, diced

  • 1/2-1 green bell pepper, diced

  • 1 pound ground beef

  • 1 teaspoon FRENCH PANTRY Herbs de Provence Mustard (or dijon)

  • 1 teaspoon yellow mustard

  • 3 tablespoons ketchup (I used a sugar free ketchup)

  • 2 tablespoons Soy Sauce

  • 1 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 2 tablespoons tomato paste

  • 1 teaspoon chili powder

  • 1 teaspoon apple cider vinegar


Directions

Preheat the oven to 415 degrees F.  Place a Bonmat on a Perforated Baking Sheet.  

Place the sweet potato slices in a bowl with the Olive oil and toss to coat.  Sprinkle them with salt.  

Bake for 10-12 minutes or until firm, but tender.  

Bring a skillet to medium-high heat and add olive oil and swirl to coat the pan.  

Add garlic and move around the pan until fragrant, about 10-20 seconds. 

Add the onions and diced bell pepper.  Saute for 2-3 minutes, allowing the onions to soften.  

Add the ground beef to the pan.  Move around the pan until the beef is cooked through.  Drain any excess grease if needed.  

Add the mustards, ketchup, soy sauce, salt, pepper, tomato paste, chili powder and apple cider vinegar. 

Stir to combine.  

Serve a few slices of the roasted sweet potatoes to a bowl and place some of the sloppy joe mixture next to it.  Top with sliced pickles, pickled onions and a little more mustard if you wish.  Makes 4 servings.
