Healthy Peach Crisp

Tools used: Square Flexipat Mold, Perforated Baking Sheet, Heat Resistant Spatula, Stainless Mixing Bowl, Mini Round

Ingredients

  • 1 1/2 pounds ripe peaches

  • 1 1/4 cups rolled oats

  • 1/2 cup almond meal

  • 1/4 cup coconut oil, melted

  • 1/4 cup maple syrup

  • 1 tsp cinnamon

  • pinch of salt

Directions

  • Preheat the oven to 350 degrees F. Place the Square Flexipat on the Perforated Baking Sheet.

  • Wash the peaches and pat them dry. You can peel them if you do not like the skins or if it is too thick.

  • Slice the peaches and arrange them in the Mold in an even layer.

  • To make the crumble topping, mix together the rolled oats, almond meal, coconut oil, maple syrup, cinnamon and salt.

  • Spread the topping evenly over the peaches. Bake for about 35-40 minutes until the crumble topping is golden brown.

* I love peach cobbler but wanted to make a healthier recipe instead of using flour and cornstarch. This recipe is very easy and delicious. Of course adding a scoop of vanilla ice cream on top would be ok, right?
