Healthy Peach Crisp
Tools used: Square Flexipat Mold, Perforated Baking Sheet, Heat Resistant Spatula, Stainless Mixing Bowl, Mini Round
Ingredients
1 1/2 pounds ripe peaches
1 1/4 cups rolled oats
1/2 cup almond meal
1/4 cup coconut oil, melted
1/4 cup maple syrup
1 tsp cinnamon
pinch of salt
Directions
Preheat the oven to 350 degrees F. Place the Square Flexipat on the Perforated Baking Sheet.
Wash the peaches and pat them dry. You can peel them if you do not like the skins or if it is too thick.
Slice the peaches and arrange them in the Mold in an even layer.
To make the crumble topping, mix together the rolled oats, almond meal, coconut oil, maple syrup, cinnamon and salt.
Spread the topping evenly over the peaches. Bake for about 35-40 minutes until the crumble topping is golden brown.
* I love peach cobbler but wanted to make a healthier recipe instead of using flour and cornstarch. This recipe is very easy and delicious. Of course adding a scoop of vanilla ice cream on top would be ok, right?
