One Pan Meatloaf

Have I mentioned that my husband loves meatloaf?  It's one of his favorite meals.  I do not make it that often, but found a recipe I wanted to try for his birthday dinner.  

This recipe is a keeper.  The meatloaf was very moist and tender, and the bonus is it's a one pan meal and you are done!  Make the meatloaves into your desired size.  The meatloaf mixture could be mixed ahead of time and when you are ready to bake then add the broccoli and potatoes to save some time.  This made great leftovers as well.

Ingredients 

  • 1 pound ground beef (I used ground chuck)

  • 1/2 pound ground pork

  • 3/4 cup bread crumbs

  • 2 large eggs, beaten

  • 3/4 cup milk

  • 2 teaspoons salt

  • 1/2 tablespoon FRENCH PANTRY Garlic & Chive Herb Blend

  • 1/4 teaspoon ground black pepper

  • 1 teaspoon onion powder

  • 1/4 cup ketchup

  • 2 tablespoons brown sugar

  • 2 teaspoons Worcestershire sauce

  • 1 teaspoon water

  • 1/2-3/4 lb broccoli, florets

  • 1/2-3/4 lb baby potatoes, halved

  • 2 Tablespoons extra virgin olive oil

Instructions

  1. Preheat the oven to 350 F.  

  2. Place the Rectangular Flexipat on the Perforated Baking Sheet, set aside.  

  3. In a large bowl mix together the ground beef, pork and breadcrumbs until fully combined.  

  4. In a medium-sized bowl, whisk the eggs together with the milk, 1 1/4 teaspoons salt, Garlic & Chive Herb Blend, pepper, garlic powder, and the onion powder.  

  5. Stir the whisked egg mixture, and 3 tablespoons of ketchup into the meat, until fully combined. 

  6. In a small bowl mix together the remaining 1 tablespoon ketchup, brown sugar, Worcestershire sauce and water until fully combined.  

  7. Place the broccoli and potatoes together in a bowl and combine with the olive oil and remaining 3/4 teaspoon salt.  Toss to coat evenly and spread it all out on the Rectangular Flexipat.  

  8. Divide the meat into 6 pieces and create an oval.  Nestle them between the broccoli and potatoes.  

  9. Using the pastry brush, brush the brown sugar sauce over the tops of the meatloaves.  

  10. Bake in the oven for 30-40 minutes until the internal temperature of the meatloaf registers 160 degrees F with a thermometer.
