Healthier Chocolate Mousse

I found this recipe from Cafe Delites when I was looking for a dairy free recipe for a cooking class.  It's delicious and will satisfy the chocolate dessert craving.  I like to serve it with fresh raspberries as well.  It's a healthier chocolate mousse with only a few ingredients. delicious, and low carb.

Ingredients

  • 2 (13.7 oz) cans full fat coconut cream or coconut milk*

  • 2 tablespoons powdered sugar (or a natural sweetener, see notes)**

  • 3 tablespoons unsweetened cocoa powder

  • Pinch of salt

  • Shaved chocolate or sugar free chocolate chips for garnish (optional)

    Directions

  • Place the sealed cans of coconut cream (or milk) in the refrigerator overnight.  Without shaking the cans, open carefully and scoop out the thick cream sitting at the top above the water.

  • Transfer the thick hard cream to a bowl and discard all of the liquid left in the bottom of the cans.  

  • Add the sugar and beat on high using a hand mixer or whisk until thick and creamy (about 1-2 minutes).  

  • Fold cocoa powder and salt through the cream and beat (or whisk) again until smooth, well combined and thick.

  • Garnish with the shaved chocolate or sprinkle with chocolate chips.   

* Coconut cream works the best, but you can use coconut milk.  Make sure to use the full fat content in both the cream and/or milk to make the cream successfully or it may not work.  Depending on the coconut milk you use, a mousse will form almost immediately once the cocoa powder is mixed through.  If not, refrigerate until set and ready to serve, or serve immediately.  

** To keep low carb, you will need to sweeten it with a quality natural sweetener.  (Natvia Icing Sugar or Swerve Confectioners Sugar.)
