Palmiers

Tools Used: Perforated Baking Sheet, Bonmat, Roul’Pat, Beechwood Rolling Pin, Mini Whisk, Santoku Chef Knife

Ingredients

  • 1 Sheet puff pastry, thawed

  • 1/2 cup sugar

  • 4 teaspoons cinnamon

Directions

  • Mix the sugar and cinnamon together with the Mini Whisk. Set aside.

  • Preheat the oven to 400 degrees F. Place a Bonmat on a Perforated Baking Sheet. Set aside.

  • Gently roll the puff pastry to flatten the folds on the Roul'Pat. Sprinkle cinnamon sugar over the entire surface of the puff pastry.

  • Fold two opposite ends of the pastry sheet toward the middle, 1/4 of the way in. Fold each side in again so the folded edges touch. Then fold the puff pastry over one more time, creating a rolled stack, 6 layers high.

  • Transfer the pastry to a cutting board. Using a sharp knife, cut the roll into four equal sections. Then cut each section into 5 thin pieces.

  • Gently lay the rolled pieces flat on the Bonmat, 3 inches apart. Bake for 15-20 minutes, until golden brown. Cool and serve.

* This is the easiest and delicious recipe to make in minutes.  If you have never used Puff Pastry do not be afraid to try it.  It's found in the freezer section usually around the desserts.  Palmiers, sometimes called elephant ears, are a simple French pastry filled with cinnamon sugar.  They are rolled inward on both ends to resemble a wide heart and are often served with tea or coffee.  Try other variations, like Nutella, or raspberry jam.  Just make sure not to overdo it with the wet ingredients, or they will run out the bottom.  These are perfect for Valentine's Day.
