Mashed Cauliflower

bonCook products used: Large Round Mold, Octagonal Bonmat, Masher, FRENCH PANTRY Garlic & Chive Herb Blend, Heat Resistant Spatula

Ingredients

  • 1 large head cauliflower

  • 1-2 teaspoons FRENCH PANTRY Garlic & Chive Herb Blend

  • 1/3 block of cream cheese

  • 1/3 cup sour cream

  • 2 tablespoon butter

  • Splash of milk

  • Salt & Pepper to taste

Instructions

  • Place the Medium or Large Round Mold on a microwave safe plate.  Set aside.

  • Cut cauliflower into smaller pieces and place in the Round Mold.  Sprinkle with the FRENCH PANTRY Garlic & Chive Herb Blend and cover with the Octagonal Bonmat.  

  • Cook on high for 6-8 minutes or until fork tender (on the soft side).

  • Add butter and mash cauliflower with a Masher.  (I use my old potato masher.  Remember no sharp edges).  

  • Add in the cream cheese, sour cream and a splash of milk.  Season to taste.  

* If you haven't tried mashed cauliflower you need to try this.  My husband loves it as much as potatoes.  It's super easy and quick to make as a side dish and you will not miss the carbs of a potato.  To make it even easier you can purchase packaged cauliflower flowerets ready to go.  My mom would make twice baked potatoes for special occasions and add in the cream cheese and sour cream and dried onions.  We loved them and couldn't wait for company so we could eat them.  The taste is very similar to the twice baked potatoes.  Its easy and something to add as a quick side dish for the grilling season without turning on the oven.  I never really measure out the ingredients so add the amount you think is best.  I always add a little warmed milk to thin it out if it is a little thick.  If you do not like the texture of the cauliflower, you can put it in a blender or food processor for a smoother consistency.
