Crisp Little Lemon Cookies

Nothing says Spring like lemons. My mom used to make these cookies for cookie trays at Christmas. I haven't made these for years and I was thinking about them. This is another recipe that uses a boxed cake mix. So easy and the crispy rice cereal adds a nice crunch. I did fit all of the cookies onto the Large Bonmat.

Ingredients

  • 1 package lemon cake mix

  • 1 egg

  • 1 cup Rice cereal

  • 1/2 cup butter, melted


Instructions

Preheat the oven to 350 degrees F.  Place a Bonmat on a Perforated Baking Sheet.  

Place all ingredients into a mixing bowl. Stir together until combined (Mixture will be a little crumbly).

Shape dough into 1-inch balls, and place on the Bonmat 1-2 inches apart.  Bake for 9-11 minutes.  

Remove cookies to a cooling rack as soon as they come out of the oven.
