Apple Cider Donut Cake

I had a host request for this cake for a cooking class.  It's everything the name of the cake says.  Delicious apple cider flavor with the cinnamon sugar mixture reminding you of eating a donut.  I have also had two customers make this cake and submit it for the monthly drawing.  All the flavors of Fall and it's made even simpler by using a cake mix.  You can substitute a spice cake mix if you wish.

Ingredients 

  • Yellow Cake Mix

  • 1 cup apple cider

  • 1/4 teaspoon cinnamon

  • 1/2 cup apple sauce

  • 3 large eggs, room temperature

  • 1 tablespoon brown sugar

  • 1 teaspoon vanilla

    Cinnamon Sugar Topping

  • 2 tablespoons cinnamon

  • 1/4 cup sugar

  • 1/4 cup butter, melted

Instructions

Preheat the oven to 350 degrees F.  Place the Forteez Spiral bon Mold on a Perforated Baking Sheet and set aside.  

In a large mixing bowl or the bowl of a stand mixer, beat the dry cake mix, apple cider, apple sauce, and eggs.  

Add in the cinnamon (1/4 teaspoon), brown sugar, and vanilla to the cake mix batter.  

Pour the mixture into the Spiral bon Mold.  

Place in the center of the oven and bake for 45 minutes.  Test with a toothpick by sticking into the middle of the cake, if it comes out clean it is ready.  

Remove from the oven and allow to cool for 20 minutes or more before unmolding.  

In a separate bowl, mix 2 tablespoons cinnamon with 1/4 cup sugar.  

Once the cake has cooled completely, brush the entire surface with melted butter.  

Rub the cinnamon sugar mixture until evenly coated.  

** bon TIP- Brush the butter onto the cake and let it sit for a minute or two before rubbing on the cinnamon/sugar mixture.  You want it slightly wet so that it holds the sugar, but not so much that it absorbs it into the cake.
